Dual Varietals Red
Terroir, Grape varieties & Vinification:
This dual varietal of Merlot and Cabernet Sauvignon is a perfect result of traditional know-how and modern technology.
Destemming of the grapes, then each varietal is vinified separately. Short maceration before fermentation for a good balance between aromas and tannins. During the alcoholic fermentation, the wine grower makes every day a pumping over, so that the juice takes aroma, colour and tannin. Long maceration after alcoholic fermentation will give complex aroma and soft tannins. Blending after fermentation.
Characteristics:
The colour is deep and bright red.
The nose is complex and elegant. It develops mature fruit like cranberry and blackcurrant, with pepper and coffee aromas.
Full-bodied and concentrated on the palate with liquorice notes.
Good complexity but easy to drink
Tasting and Matching:
Serve between 17 and 19°C.
It matches well with authentic food like « Potée Auvergnate », « Cassoulet », « Bœuf Bourguignon », red meat such as lamb or strong cheese.
